french onion soup

slice the onions up and cook them gently in the olive oil for about 20 minutes, until they are golden. about 5 minutes in to this cooking, add the spices (not the thyme.)
here are your ingredients (minus the bread and cheese) to make your soup.
while you occasionally stir the onions, cut up about 4 slices of french bread per bowl.
the bread should look like this in the bowls. toast the bread, then stick it back in the bowl.
after 20ish minutes of cooking, your onions will look lovely. add your wine to them, and then cook a minute longer, to let that wine steam off a bit.
after the wine has cooked, add in your beef broth.
beef broth in, put in your thyme and stir. then wait till the stock begins to boil, lower the heat to a simmer, and cover for 2 hours.
after cooking, the soup will look like this, which is awesome. take this broth and spoon it over your toasted french bread in the bowls.
take your swiss cheese and layer it over your stock and bread. stick these bad boys in the oven under a broiler on high for about 3 minutes, or until the cheese is bubbling and a little brown.
voila! awesome soup
